All pumpkin everything, right? Yes.
I'm not a HUGE sweets person but boy is this a yummy one! I used to make chex mix (the savory version) with my mom as a child. The smells that used to fill the kitchen bring back some pretty awesome memories. When I set out to make this all-time childhood favorite of mine, I stumbled upon a number of different versions of Puppy Chow (also known as Muddy Buddies). When I saw the word pumpkin attached to it... I was sold.
Pumpkin Spice Puppy Chow
1 cup White Chocolate Chips
1/4 cup of Butter (1/2 a stick)
1/2 cup of Peanut Butter
2 teaspoons of Pumpkin Pie Spice
1/2 teaspoon Vanilla Extract
9 cups of Rice or Corn Chex Cereal
1 cup of Powdered Sugar (I ended up getting a little hand heavy with this so that they were well coated)
Heat white chocolate chips and butter together in a double boiler (also works to cook in the microwave) until melted. Stir in your peanut butter, pumpkin pie spice and vanilla extract ingredients until well blended.
Place the cereal in a large bowl or baking dish. Pour the (yummy) chocolate mixture on top of the cereal and gently toss until the cereal pieces are evenly coated.
Add the chocolate-covered cereal pieces to a large sized bag (1 to 2 quart size) and fill with powdered sugar. Shake until all of the pieces are covered with powdered sugar.
Empty your puppy chow onto parchment or wax paper to dry. I chose to then package them in cute little Halloween themed bags to give away to family and friends - so that we didn't consume them all in one sitting! :)
I love the seasonal spin on this favorite. Who doesn't want another reason to make Puppy Chow? The pumpkin season isn't over, folks... :)
