I’m definitely an appetizer type of girl. I would order 2 to 3 appetizers for myself over a meal any day. One that I and so many can’t seem to escape at food oriented gatherings is the, deviled egg. You have the simplest of them with a sprinkle of paprika, and you have the holy grail of them all that throw in an Asian or Mexican flare (recipes to come). But my favorite of them all is without a doubt, deviled eggs with spiced pecans and chives. It is a perfect blend of flavor, but keeps hold of the down home southern roots of the dish.
You must, and I mean must try these. Bring them to your next get-together and you will not regret it! Don’t expect to bring home leftovers either, because there won’t be any. I promise.
Deviled Eggs:
18 eggs, hard boiled and peeled
½ -3/4 cup of mayonnaise (depending on how creamy you want it)
2 tablespoons of relish
2 tablespoons of Dijon mustard
Garlic salt and pepper
Chives chopped small
Quart sized Ziploc bag
Spiced Pecans:
1 cup of pecans (mashed into small pieces)
1 tablespoon of butter
Sprinkles of each of the following:
-Sugar
-Garlic Salt
-Chili Powder
-pepper
-Cinnamon
-Cayenne
-Onion Powder
Halve the 18 eggs lengthwise. Remove the yolks and place the contents in a medium sized bowl.
Next, mash the yolks with a fork and stir in the mayonnaise, relish, and mustard. Then add garlic salt and pepper to taste.
Once the filling is done, place all of it inside the quart sized Ziploc bag. Cut the corner of the bag big enough so the filling has room to come out (imagine as though the filling is like icing we are squeezing out onto a cupcake.) Squeeze just enough filling into each egg half to fill up the half circle “dip” and set aside.
Heat your pan on medium-high and add your butter. Once it is melted, pour in your mashed pecans in and begin to stir around until all of the pieces are covered in butter. Next, sprinkle in each of your spice ingredients. Continue to stir until the pecans start to brown a little. Often times I taste test these to see if they need a little more spice or sweetness before completing the previous step.
You’re almost done! Now simply garnish the deviled eggs with the chopped chives and spiced pecans and you are finished.
NOTE: Do not eat all of them before you arrive to your get-together :)
