A Gal's Go-To Meal

Cooking for one can be quite different than two.  By this I mean, cooking for a guy is a whole different world.  Back when I used to cook for myself, meals were a lot less bread-filled and full-portioned.  I have found ways of incorporating my old style with me new, but this is an old time favorite of mine.  I actually cooked this meal SO often that I acquired the nickname "1/3 of a pounder" at the grocery store fish counter because I would only buy one measly portion of Salmon at a time. What's a girl to do when she is not trying to be wasteful? Been there, done that.

This Salmon dish can be played up in a hearty salad with red onion, blue cheese crumbles, and strawberries or as simple as a side of broccoli. Enjoy!

Citrus-Soy Glazed Salmon for One

1/3-1/2 a pound of Salmon (one piece)

1/2 cup of any type of citrus juice (I prefer Orange Juice or Dole Strawberry-Orange)

3-5 tablespoons of Soy Sauce (depending on how much of a salty-sweet mixture you prefer)

Garlic Powder and Pepper to taste

Preheat your oven to 350 degrees.

Add these ingredients to a ziploc bag (or even the bag the salmon comes in at the store), seal, and set aside.  Heat up your stove-top pan to medium high.  The high heat is important because we want to see the sugars from the juice caramelize and crust onto the salmon (yum).

Pan-sear the salmon starting with the skin side down.  Cook on either side for 2-3 minutes, or until there starts to be a little "browning" or "burn" on the top (sounds weird but refer to picture below).

Once both sides have been crusted, place the pan in the oven to finish off the cooking process. Cook in the oven for about 5-7 minutes.  I like my Salmon medium-well as opposed to well so I take it out at about the 5 minute mark and leave it to sit for a while on top of the counter.

You're done! So simple! Now pair it with a simple side and you have quite the delicious meal to dig into!
